Crushed the old world varietal Cinsault with our Grenache, cold-soaked the must (crushed grapes) before adding RC212 yeast, pressed after 11 days, aged 24 months in small oak cooperage (American and European). Added a mere 1% of Cabernet Franc. Sterile filtered at bottling, bottle aged for one year before release.
